Cake & Awards -- Kickstart 2011

I hope everyone has been having a Happy New Year!
I've never really been a fan of January... except for beloved boyfriend's birthday, but I'm determined to make it fun and meaningful while we endure it!

So, to start off, I thought I'd share something fun I did recently. 
I took a Fondant I class and made this lovely cake:

I had never done anything with fondant before and I was a little nervous that I wouldn't be able to do it, but it was really easy with the help of the ladies at Sweet Wise.

For smooth fondant, I learned that it's best to work an inch at at time from the top all the way around to avoid pleats. 

And just like that, I have a yummy cake and a cute little certificate!
I'm glad I took the class because this cake stuff is expensive and far too expensive to just experiment without a little help!

Helpful cake tips I learned:
1. The value of a crumb coat! Did you know that whether you're using fondant OR buttercream you should do a crumb coat? Yes! That will keep the crumbs in the cake and not on the icing. Simply ice with a very thin layer of icing to literally catch the crumbs. Lay the fondant while it's wet, but let it dry a little before applying a second layer of buttercream. 
2. You should warm your cake ingredients before you incorporate them to avoid that "dome" that happens on the top of a cake.
3. The colder your cake is, the easier it is to work with it!  
4. Don't like the taste of fondant? I didn't think I did either until I made this cake. Turns out that bad fondant is made with low grade fondant and uses far too much corn starch which completely alters the taste. Try FondX. It's amazing.

I need to do a class for that too! I played around with it for my daughters sixteenth birthday party and had a hard time with it sticking, but then again I rarely follow any kind of directions so I'm sure it was something I didn't do just right.

The cake is lovely though and I bet it was a fun class! I've got an entire attic full of all kinds of cake pans and stuff from back in the day and I'd love to get into it again, it was lots of fun.

I'm glad you loved your award although I'm not sure I can talk to you anymore. No chocolate! Ugh, what ARE you???? lol I'm kidding, I live for chocolate! Have a great night sweetie and good luck with your new job!

Wow.. that cake is awesome! Congrats on your award too :) I love these random facts. I too, am not a chocolate fan (although strangely becoming more so as I get older) and I know the lyrics to almost every Beatles song (I don't think I can claim full mastery). Good luck with your new job and Happy 2011!! May it be filled with laughter :)

Your cake looks adorable! I always thought fondant tasted awful too. Maybe I'll give it another go since you say the fancy kind is not so bad. It looks so pretty.

Happy New Year! The cake looks great. I make my fondant on my mixer from start to end and then it is easier to work with and I end up not adding cornstarch. I also use it a lot to make figurines instead of using gum paste.
It is great to play with the sugar paste :-)

Gum paste is just fondant with a drying agent sprinkled in it! If you call a local baker or google it I'm sure you can find some good stuff! It dries quickly, but it's easy to work with! If it gets too dry I learned you can use just a little bit of shortening (TINY AMOUNT) to make it easier to work with.

this looks GREAT! i've never worked with fondant, but i think that might have to be my next project. this morning i'm working from home, which means that I am really procrastinating and looking up how to make chocolate truffles! i'll be posting pictures soon... unless it turns out to be a huge mess, in which case, i'll pretend like i never told you this. : )
